Easter recipe: Carrot cake!

Hello everyone! How are you guys doing?

This weekend is Easter time! What are you planning to do?

To help you making an amazing breakfast or afternoon tea, I am gonna share an easy and delicious Carrot Cake recipe! Doesn't take long, it is easy and really delicious.

So, let's go!!

Carrot Cake

Ingredients for the cake:

300g Soft Brown Sugar

3 Eggs

300ml Sunflower Oil

300g Plain Flour

5g Bicarbonate of Soda

5g Baking Powder

5g Ground Cinnamon

3g Ground Ginger

300g Grated Carrots

Ingredients for Cream Cheese frosting:

65g Unsalted Butter

250g Icing Sugar

170g Cream Cheese

Method:

1. Put the sugar, eggs and oil in a bowl and mix together until all the ingredients are well incorporated.

2. Sieve the flour, bicarbonate of soda, baking powder, cinnamon and ginger and add to the mix.

3. Stir in the grated carrots until they are evenly dispersed.

4. Line the bottom of a 20cm cake tin with silicone paper and oil the sides.

5. Bake in 170ºC oven for about 1hour until golden brown.

6. Do not turn out of the tin until completely cool.

For the filling:

1. Beat the icing sugar and butter together until mixed well.

2. Add the cream cheese in one go and beat the mix until incorporated. Continue beating for 5 min until light and fluffy texture.

For the mini carrots:

1. Take some marzipan and divide in two.

2. In one part, mix red and a bit of yellow coloring gel.

3. In the other one mix a bit of green coloring gel.

4. Make smalls cones with the orange part. With a knife, cut some lines to look like a real carrot.

5. Put a little bit of green marzipan on the top.

After your cake is cold, divide into three equal layers (really carefully). Use the top layer as the bottom of the cake and cover with the filling. Put the middle layer and cover with the filling. After that, flip the bottom layer upside down and make your top with the rest of the filling. Decorated with marzipan carrots.

Tips: If you have three equal tins, it is better to divide the dough to bake, because it is really crumbly and you need it cold if you want to slice it.

Use all the ingredients, especially cream cheese and butter, at room temperature.

You can also add some raisins or walnut to the dough.
